Powdered Garlic & Onion
We call our garlic powders "dusts" because they are nothing like granulated factory-made garlic powder: our powders are pure dehydrated & ground garlic and onion. Mass-produced granulated garlic contains additives like anti-caking agents, almost always contains roots & peels, and sometimes even contains artificial flavorings.
Our garlic & onion Dusts are very finely ground and will melt into whatever you add them to. On the other hand, Flakes will hold their shape - like minced garlic - and add a subtle crunchy texture to your cooking.
Raw Garlic Dust/Flakes will add the punchy, intense flavor of a freshly sliced clove of garlic to your cooking. Roasted Garlic Dust/Flakes is equally garlicky, but was slow-roasted before dehydration so it will add the more complex flavor of roasted/caramelized garlic.
Black Garlic starts out as regular raw garlic - it's not a special variety. It's special because of the way it's prepared: to make Black Garlic, raw garlic is gently heated at a low temperature over the course of a month, causing its color, flavor and texture to completely transform. It transitions from raw garlic to having a deep, rich color and flavor with the texture of dried fruit. The flavor is complex, with a sweetness similar to balsamic or molasses, hearty umami, and a mellow savory garlic flavor. We then take it a step further and dehydrate the Black Garlic into a Dust, making this delicacy into a form that’s easier to incorporate into any savory dish.

After many years of making Garlic and Onion Dusts, we found that some powders had a tendency to cake up more than others. This happens because we don't add anti-caking agents to any of our spices. To counteract this, we leave the Yellow Onion bits flaky, allowing them to stay loose and making them easier to cook with. Rest assured - even though they're flaky, they will melt into your cooking the same as our finely ground Dusts.

Pickled Garlic & Onion
Most of our customers enjoy our Pickled Garlic right out of the jar! When you use it other ways, think of it like you would a pickled or an olive. For example, add it to:
Salads (think leafy green salads AND pasta salads)
Sandwiches (think burgers, cold-cut sandwiches, paninis, pulled pork sandwiches)
Charcuterie (alongside meats & cheeses)
Drinks (Bloody Marys, Martinis)
Anywhere you need an acid (slice it up and sprinkle it over nachos, tacos, steak, etc.)
All of our Pickled Garlics are made with the same brine and contain red pepper flakes and black peppercorns, which gives them a very subtle bite.

About Rockerbox
These homemade dusts were time and labor intensive. I gifted and traded them away as if they were precious gold nuggets, hence the name: a “rockerbox” was the sifting tool used during the gold rush to separate gold from soil. I knew that finding real garlic and onion powders in a world of processed foods was a precious thing, and the idea was born.
